Caesar Salad Dressing

Almond Caesar Salad Dressing - Red Hot and Hungry

I make this recipe on a weekly basis now since I discovering it more than a month ago. I kid you not! It comes from Thug Kitchen’s first cookbook and there isn’t one possible thing I could do to make it taste better. I’ve tried! Only twist I can add here is a few new salad ingredients to serve as an excuse for getting this addicting dressing into your mouth.

Caesar Salad Dressing
Makes about a cup

1/3 cup almonds
1/3 cup hot water
2 garlic cloves
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon rice vinegar
1 tablespoon capers

To make the dressing, let almond steep in hot water for 15 minutes until they are soft. Put into a blender with the rest of the ingredients, from the garlic cloves to the capers. Mix to combine. Dressing should be thick and creamy—like any other Caesar dressing you’ve ever had. Did you take a taste yet? End up licking the spoon clean?
