Asian Sesame Slaw - Red Hot and Hungry

Addictive. Try it and tell me if anything else needs to be said.

Asian Sesame Slaw
Makes a lot – which is never enough. Recipe adapted from one in Eating Clean magazine.

2 cups red or Napa cabbage, or a mix of both, cut into 1/4-inch strips
1 cup radicchio, cut into 1/4-inch strips
1 cup packaged broccoli slaw or shredded carrots
3 red, orange and yellow bell peppers, cut into 1/4-inch strips
4 scallions, sliced diagonally
1 tablespoon finely chopped cilantro
1/4 cups golden raisins or goji berries
2 tablespoons crushed peanuts
2 tablespoons sesame seeds
3 tablespoons sesame oil
1 tablespoon soy sauce
2 tablespoons honey
2 tablespoons rice vinegar
1 teaspoons chile paste or sriracha
2 teaspoons minced fresh ginger
fresh ground black pepper

1. In a large bowl, toss together cabbage, radicchio, broccoli slaw, peppers, scallions, cilantro, raisins, peanuts and sesame seeds.

2. In a small bowl, whisk together sesame oil, soy sauce, honey, rice vinegar, chile paste, ginger and black pepper to taste.

3. Add dressing to slaw and toss gently to combine.

    Hi Lexie,
This Asian Sesame Slaw looks totally yummy to this veggie lover! My mouth is watering just thinking about it.

I finally made the Peasant Soup last weekend. I left out the ham hock and garlic (because I don’t like them…told you I am a picky eater) but it was still delicious!
